This is a great recipe to make when you don’t have much time and you want something easy, light and delicious! The sauce is 100% vegan for those who prefer it! From start to finish, you’ll be eating within about 20 minutes.
Ingredients
Simple and easy…FIVE ingredients! I like thin pasta so I use Cappeli d’Angelo pasta. If I can’t find that, I use Capellini or Angel Hair pasta – if you ask me, they’re all the same! But you can use the pasta of your choice. The sauce is basically as the title describes: garlic, olive oil and tomatoes. I like to add a splash of white wine for flavor.
How To Make Pasta with Garlic, Olive Oil and Tomatoes
The first step is to chop your garlic into very small pieces. Over medium-low heat, heat your olive oil in a pan large enough to hold the pasta of your choice. Let the garlic saute for about 3 minutes, stirring often.
Add the white wine if you’re using it, then add your tomatoes. Chop up any large pieces of tomato with your wooden spoon and simmer for about 15 minutes. Keep an eye on the sauce! If you like your sauce thicker, you may want to simmer it longer. I like mine runny, so 15 minutes is perfect. You may want to start your pasta at this point!
Taste Your Sauce!
Before you serve, you should always taste your sauce to see if you need to season it. I usually find that it needs some salt. You could also use pepper, red pepper flakes, or any herb that you like in your pasta sauces!
When the sauce is to your liking, add your drained and cooked pasta, and toss. Now you’re ready to serve!
Yummy! I serve this pasta with my Homemade Focaccia Bread and some red wine. It’s so delicious!
