Today I’m making egg white scrambled eggs! I felt like breakfast for dinner and I had all of the ingredients I needed. This is a very easy meal to make and it’s so comforting to eat!

Ingredients for Egg White Scrambled Eggs
I always say to take a recipe and make it your own. These are the ingredients I used, but feel free to shake things up! I used 4 egg whites, a clove of garlic, about a third of my jar of home canned tomatoes and a handful of frozen spinach. I also used unsalted butter for cooking the scramble.
How to Make and Egg White Scramble – Directions
The first step is to separate your eggs. I only use whites because of digestive issues but feel free to use the whole egg. After I separated the eggs, I whisked the whites for about a minute. This makes them nice and frothy – creating a softer, fluffier egg scramble. Next, I chopped up the garlic.
Over medium heat, I added a little bit of butter to my frying pan. When the butter was melting and sizzling, I added my whisked egg whites. I let them cook until they had a white opaque color; then I started to scramble them.
I added the garlic, tomatoes, and spinach and let that cook for 2-3 minutes. Lastly, I sprinkled some Cheddar cheese into the pan and mixed everything up to make it creamy and cheesy!
This took less than 10 minutes to prepare and cook. I served my scramble with some toasted homemade Whole Wheat Bread, some orange juice, and a hot mug of coffee. This recipe serves one, but it’s easy to double or triple it if you have more than yourself to feed!

3-4 egg whites
1 clove garlic, chopped

Shredded Cheddar Cheese
Directions
- Prepare the egg whites by whisking them for about one minute to make them frothy.
- Melt the butter in the frying pan over medium heat.
- Add the egg whites, let them cook until they start to turn white, then scramble.
- Add the garlic, tomatoes and spinach, mix well and let cook 2-3 minutes.
- Sprinkle some cheese on top and mix well.
Great post Rain! We will be trying this breakfast out for sure! We eat breakfast for supper a lot of times when we have been too busy to fix a big meal… hope your weather gets better soon! Our temps are warmer now, but it’s like rain and wind every day!
