How To Make Pancakes From Scratch
This recipe could not be easier! The first step is to whisk together your dry ingredients. If you’d like to add spices or any kind of seasoning to the dry ingredients, now is the time! I then make a well in the center of the dry ingredients and then add my wet ingredients. I whisk very well to make a smooth batter. Sometimes you have to mash down the brown sugar if you see lumps. You can add chocolate chips, fruit such as blueberries or bananas, or even pieces of caramel to the batter. Anything you think might taste good in a pancake probably will!
I love using my tiny little frying pans! I bought a few of these years ago when they were on sale and I pretty much only use them to make perfect-sized pancakes! I butter the pan just to make sure nothing sticks on the first run. I then drop in the pancake batter, about 1/4 a cup at a time.
When I start to see bubbles forming on the top, I slide my lifter under the pancake to check the color. If it’s a nice brown color, I flip it over and let it cook for a few more minutes.
And that’s it! Breakfast is served!

Ingredients
2 cups (270 grams) all-purpose flour
2 tbsp (27 grams) brown sugar
2 tsp (9 grams) baking powder
1.5 (7 grams) tsp baking soda
1/2 tsp (4 grams) salt
2 tbsp (20 ml) melted cooled unsalted butter
1 & 3/4 (415ml) cups milk
2 eggs
Melted butter to grease the pan
Directions
- Whisk all dry ingredients together, and make a well in the middle of the bowl.
- Pour all wet ingredients into the bowl and start to whisk from the center out, until all is incorporated into a lump-free batter.
- Heat a non-stick pan on medium heat. Brush with melted butter. Pour 1/4 cup of the batter into the pan for each pancake. When the top starts to bubble, flip and bake the other side.

Notes
- To keep the pancakes warm, wrap them in foil and place them in a 300F oven.
- You can add spices to the dry ingredients.
- Add some fruit (blueberries, bananas, strawberries) or chocolate chips to the batter!
- Serve warm with butter and maple syrup. You can also serve pancakes with jam or Strawberry Simple Syrup.
