Easy Almond Biscotti Recipe

Ingredients
1 cup butter, softened
1 cup brown sugar
3 eggs
1 tsp almond extract or Amaretto
3 cups flour
1 tbsp baking powder
1/2 tsp salt
1 cup chopped, blanched almonds
Directions
- Preheat oven to 300 F.
- In a large bowl, cream together the butter and sugar until fluffy. Add the eggs one at a time and beat until combined. Add the extract and beat.
- Combine the flour, baking powder and salt in a separate bowl. Add the flour mixture, a little at a time, to the butter mixture, and stir well until combined. Stir in the almonds.
- Line a baking sheet with parchment paper.
- Divide the dough in half and form each half into an even rectangle, place each rectangle onto the baking sheet.
- Bake for 35 minutes. Remove to wire racks and let sit for 15 minutes. Increase the oven to 325 F.
- Transfer the biscotti to a cutting board and gently slice each rectangle into approximately 3/4 inch slices. Place on baking sheet.
- Bake for 10 minutes; flip and bake for another 10 minutes.
