Today I’m sharing my recipe for Simple Vegan Pancakes. These pancakes taste just like non-vegan pancakes and they rise very well into a fluffy pancake. I serve them with my Strawberry Simple Syrup and some orange juice!
Ingredients For My Simple Vegan Pancakes
To make these pancakes, you only need six ingredients: all-purpose flour, almond milk (or your favourite plant-based milk), coconut oil (in its liquid state), baking powder and salt, and some brown sugar. I save some coconut oil for the pan, to grease it before frying the pancakes.

How To Make Vegan Pancakes – Step By Step
The first step is to whisk together the dry ingredients. Add spices at this point if you like! The second step is to add all of the wet ingredients and whisk well. If your coconut oil is solid, you can warm it up in the microwave for a few seconds until it turns into a liquid. It incorporates much easier when it’s liquified. At this point if you want to add some fruits, be my guest! I have made these with vegan chocolate chips and the result was delicious!
To be 100% honest my friends, these pancakes do stick to the pan – even if you have a non-stick pan. Knowing that, I generously grease the pan with coconut oil then drop in the batter about 1/4 cup at a time.
The first time I made these, I was eager to check underneath the pancake to see how it was doing – BIG MISTAKE. It completely fell apart! If you have your burner on medium heat, I’d say let it be for a good 3-5 minutes. When you see lots of bubbles forming on the top of the pancake, you can take a peak underneath – as long as it’s been cooking a minimum of 3 minutes, otherwise, well, you’ll see – it’ll just break all into bits. Before flipping the pancake, make sure to re-grease your pan with more coconut oil. You have to do this every time or the pancake will stick! PS: It’s worth the effort! Once flipped, I leave the pancake cooking for another 3 minutes or until the bottom side is nice and golden/dark brown.

Ingredients
1 cup (145 grams) all-purpose flour
1 tbsp (10 grams) brown sugar
1 tbsp (12 grams) baking powder
1/4 tsp (2 grams) salt
1 cup (250 ml) almond milk
2 tbsp (20 ml) liquid coconut oil
Coconut oil for the pan
Directions
- In a large bowl, whisk together the dry ingredients. Add the almond milk and coconut oil and mix until smooth. Make sure your coconut oil is in its liquid state, it makes it easy to combine into the batter.
- Heat a non-stick pan on medium heat. Grease the pan generously with coconut oil. Pour 1/4 cup of the batter into the pan for each pancake. Let the pancake cook for 3-5 minutes before looking underneath. If the pancake is the color you like, lift it, re-grease the pan with coconut oil then flip the pancake and cook the bottom for another 3-5 minutes.

Notes
- You can add spices, fruit or even vegan chocolate chips to the batter!
- Make sure the coconut oil is in its liquid state before adding it to the batter for easier mixing.
- Grease your pan every time you either add batter or flip the pancake – these pancakes DO stick!
- Let the pancake cook for a minimum of 3 minutes before lifting it to look at the bottom, otherwise the pancake may fall apart.
- Feel free to use any plant-based milk that you enjoy.
