This chocolate pudding is creamy and delicious – and it’s vegetarian. This homemade pudding doesn’t contain cornstarch – it uses flour and egg whites for thickening. It’s quick too, it takes under 15 minutes to make. I was tempted to just eat it hot out of the pot!

Ingredients for my Quick Vegetarian Chocolate Pudding
Most of us will have all of the ingredients in the house already! I used brown sugar, cocoa, flour, salt, 2 egg whites, milk, unsalted butter, and vanilla. If you have a sweet tooth, you may want to increase the sugar by 1/4 of a cup – and you could always use white sugar if you like. I use brown sugar because I love the flavor. Also, feel free to increase the amount of vanilla extract as well!
How To Make No-Cornstarch Quick Vegetarian Chocolate Pudding – Directions
The first step is to separate your eggs. I don’t use egg yolks due to digestive issues, but if you’d like to use the whole egg, I’d suggest only using one. After that, I whisked all of the dry ingredients together and set them aside.
With the heat OFF, I added the egg whites to my pot and whisked for about a minute. I just wanted to get some air into the egg whites to make them frothy. Next, I whisked in my milk and the dry ingredients. After the dry ingredients were more or less incorporated, I turned the heat up to medium.
I was whisking constantly as the pudding mixture heated up to make sure nothing stuck or burned. Once the mixture started to bubble, I turned the heat down a little bit and cooked the pudding for 3 minutes – whisking constantly. You will notice that the pudding will thicken quite a bit during the cooking time! The last step in cooking the pudding was to whisk in both the vanilla and the butter.
I poured the pudding into two dishes that I had handy and covered them with cling film. Covering them with cling film helps the tops from forming that thick skin as the pudding cools. I put my dishes into the fridge to let them cool completely.
The pudding is ready to eat! This is a very thick pudding – that’s the way I love it. The recipe makes 2 very generous portions, but I’d say more like 4 regular portions. It’s filling too! After a few slices of pizza, I could only eat about a third of the small one!

Quick Vegetarian Chocolate Pudding – No Cornstarch

Ingredients
1/2 cup (110 grams) brown sugar
1/4 cup (27 grams) unsweetened cocoa powder
1/4 cup (33 grams) all-purpose flour
Pinch of salt
2 egg whites
2 cups (500 ml) milk
1 tbsp (13 grams) unsalted butter
1 tsp (6 ml) vanilla extract
Directions
- In a bowl, whisk together sugar, cocoa, flour, and salt, and set aside.
- In a medium pot, whisk the egg whites until they’re frothy, about one minute. Add the milk and whisk to combine. Add the dry ingredients and whisk constantly until blended.
- Whisk constantly over medium heat, and bring the mixture to a boil. Cook, whisking constantly until mixture thickens slightly, 3 to 5 minutes.
- Whisk in butter and vanilla.
- Pour into serving dishes and let cool.

Notes
- If you like your pudding really sweet, feel free to add an additional 1/4 cup of brown sugar.
- To avoid the chocolate pudding “skin”, place cling film on top of the pudding after pouring. Make sure the cling film touches the top of the pudding, then refrigerate.
